We are removing lib/bluetooth-client-glue.{c,h} for a long time on Gentoo to force their regeneration during the build and, then, allow us to avoid a dependency on newer glib versions:

Could this files not be provided then with the tarball?

This has been fixed since the first gnome-bluetooth release to be done with meson as the build system (3.25.91). See bug 785737.
