There are two new issues with opening files using non-default application:

1. Right click on a file. "Open with other application" launches a popup instead of just being a submenu with a list of other apps. Now it takes one click more to select the app and distracts attention by raising a new window.

2. When multiple files of the same type are selected, the context menu lacks "open with other application" entry. Only the default app may be used. This is a major drawback, as some files could be opened in groups with different applications (e.g. for JPEG the default is a viewer but multiple files could be opened for editing with non-default gimp).

(Just a tip: when reporting two different ─ although related ─ issues, one report for each issue is easier to deal with.)

Thanks for reporting this. Indeed, this was a bug and has been fixed by commit bac36a5c59b0fd8f56d96025eb326f3d30f24f5f

This fix should be in nautilus 3.16.2 and later versions. Please update your nautilus and report this again if it's still not allowing you to open multiple images with GIMP at once, for instance.

Both approaches have their advantages and disadvantages. You can follow the discussion in bug 777132 about this very issue.
