Regression: The toolbar can't be customized

With the new UI I've realized that the toolbar can't be customized. I think we don´t need to drop this feature if possible, this can help our users (or part of them) to make a easy transition to the new UI.
Evince 3.8.3. I can't edit the tool bar. I tried following the documentation https://help.gnome.org/users/evince/stable/toolbar.html.en#modify but it does not work.

So are you saying it is intentional that toolbar editing is removed?

The toolbar was redesigned, the editor was removed and it does not seem to come back at least there were a very good reason to do that. What are the particular buttons that you need to add or remove? and why?
I find the zoom in and zoom out buttons very useful, i can just keep clicking zoom in until I can see the detail i need. with the current toolbar, i have to click a drop down, then work out which is the next zoom level and select it, then repeat again until its zoomed enough. I tend to add quite a few of the buttons (rotate, continuous, dual), because they are only taking space that would otherwise be wasted.
Exactly my problem. I describe two use cases below: 1. Zoom level I change the zoom level very frequently. For example, when I am looking for some physical insight between several academic articles, I should frequently zoom out (e.g. to see the structure of the paper, to look for a plot or a phase diagram) and zoom in (e.g. to see one particular plot or equation in more detail, to focus on one section of the paper). In evince 3.6 or below, I could change the zoom level (Fit width, Fit document) with just one click (because I had added the buttons to the toolbar). In evince 3.10, however, I need two clicks, and it requires more concentration to look for the desired item in the drop-down list. 1. Open the containing folder: For example today I searched for a PDF document in the dash (again, a research paper) and opened it. While reading, I remembered that I have several papers on the same topic in the same folder, that I had forgotten about. I wanted to open some other documents from the same folder. In evince 3.6 or below, I could open the containing folder with just one click (because I had added the buttons to the toolbar). In evince 3.10, however, I should do it from the drop-down menu, and there is not even a shortcut for that.
I can also attest for this feature, It is very nice to have the customization of the toolbar buttons, Especially if using on a touchscreen

I would like to remove the Delete button from the toolbar on notes. As i cannot, proposing that this is a confirmed bug.
For me, evince 3 is not useable at all for the purposes I need because toolbar customization got dropped. I use evince for all my presentations in class, with no keyboard at hand (and even if it were at hand, I would not use it with my chalky fingers), and either with a (very imprecise) presenter/gyromouse as pointing device, or by operating the mouse while standing (also very imprecise). In evince 2, I configured toolbar buttons for almost all operations: Go to end or beginning, start presentation, rotate, +/- zoom, twopage, toggle sidebar, ... Hence, a single click on some large, easy to target button was all I needed to do for any operation I wanted. In evince 3, there are no toolbar buttons for all these things. One either needs a keyboard (shortkey) or two clicks, and the second click (in some pulldown menu) needs to be quite precise. Even the first click is more difficult, because the toolbar is smaller. So evince 3 simply can't be used for what I need (that's why I'm currently using atril until this regression gets fixed). And I agree with others that having a customizable toolbar is also a big advantage on touch screens (some of my students are reading my materials on linux notebooks with touch screens).
As a work around I use Atril which is a forked version of Evince maintained by the MATE project. It is available in most distros now.
I agree it is a regression to remove the toolbar customization. Would be nice to have it back in the future, because I was using this feature and first I couldn’t believe it was gone after upgrade from Ubuntu 12.04 to 14.04 .
To me, the classical standard use of a document viewer is to print and to save files. Adding buttons for printing and saving to the toolbar was the first thing to do for me. Since upgrading to ubuntu 14.04, i.e. evince 3.10.3, this is not possible any more. This impairs the usability so much for me that I will have to move to another document viewer.

I use a laptop with a fairly small display, so I place a high value on efficient use of screen space. On evince 3.16.1 the toolbar is currently about 80% wasted pixels. What I'd *really* like is an option to hide the toolbar, especially in fullscreen mode. However there doesn't seem to be much interest from the developers in reinstating this feature: https://bugzilla.gnome.org/show_bug.cgi?id=714996 Failing that, it would be less annoying if I could at least add some more controls to the toolbar so that some of those wasted pixels could serve a more useful purpose. I'd most like to see buttons for printing, saving, and switching between single page/dual mode.

Unless you keep the mouse pointer in the top.

The toolbar certainly doesn't autohide in 3.16.1. Besides, I would also like to have the option to hide the toolbar outside of fullscreen mode.
I also tried installing 3.18.2 from `ppa:gnome3-team/gnome3-staging`, and I still see no toolbar autohide behavior in fullscreen mode, even if I move my mouse onto a different display and wait for 30+ seconds. Am I missing something here?
3.18. However, the toolbar auto-hide has been there since many releases ago. I press F11, the toolbar is there, but once I start navigating the document (say page down), the toolbar disappears. If I move the mouse pointer to the top, the toolbar appears again. Check if you have the left pane activated, as it might prevent to hide the toolbar. Nevertheless, this bug is about customizing the toolbar, and that does not include hiding the toolbar. Since Evince moved to Client Side Decorations (using GtkHeaderBar), the option to hide the toolbar is not going to be implemented, as it is not possible because it is also used as window decoration. In comparison with 2.x series, it takes more or less the same space used by the window manager + menu bar (a little less today, I would say). It would be like implementing the fullscreen mode in non-fullscreen, it would look alien.
As many other users, I also believe it is a regression to remove the toolbar customization, and would like to have it back in a near future. It is a pity, because Evince is really a great PDF viewer (was certainly the best one before this regression) In the meantime, we will try out some other PDF viewer.
