Is this a gtk2 or gtk3 build of g-t 3.0.x ? If it's gtk2, try a gtk3 one since gtk2 is unsupported.

Only one issue per bug, please!

The "Show menubar" thing is a dup of bug 658760.

The "alt key" issue might be a dup of bug 661973...

Have you made sure that gconf works? Ie in the Keybindings dialogue, does the checkbox state as expected from the value of the gconf key /apps/gnome-terminal/global/use_mnemonics (which should be set to FALSE) ?

This is only one issue, it's that my Alt key combinations are intercepted by the menus that shouldn't be visible and active.

I do think that it's a dup of bug 658760.

It's GNOME Terminal 3.0.1, but I don't know if it's gtk2 or gtk3, how do I check?

I found a posted workaround that seams to have fixed the problem:
 
 sudo apt-get remove appmenu-gtk3 appmenu-gtk appmenu-qt

Alright, if that makes the bug disappear, it's NOTGNOME. The ubuntu 'global menu' stuff is NOT supported; removing it is the right thing to do!
