Doesn't seem to be any way to change the email address I have
registered with Bugzilla. If I should change ISPs (or employers),
it would be nice to be able to continue corresponding regarding
pre-existing bugs.

Not really a bug, enhancement? Maybe this is fixed in a later release
of bugzilla. You can always mail bugmaster@gnome.org to get it done.
