In gnome-terminal, the Edit > Keyboard Shortcuts menu allows to modify shortcuts but not to disable a shortcut, unless it has no default value.

Oh, sorry, just figured out that binding a shortcut to the "backspace" key actually disable it…  Anyway, this is not straightforward, I think a statement should be added somewhere in the keybinding popup.
