One of my user who wants to send HTML mail complains that he has to set the font/color/etc. again everytime he sends a new mail. This could be solved by adding an opton in the editor preferences.

I am surprised to find out that I am the second person for the last decade to request the same thing.  Isn't this a serious issue for accessibility, for people with bad eye sight?  How hard would it be to add a default color beside the default font style and font size in the preferences?

This bug is about font style, font size and font color.  The first two are already implemented.  The last one is not though.

Version:  3.18.5.2 on Ubuntu 16.04 LTS.

GNOME is going to shut down bugzilla.gnome.org in favor of gitlab.gnome.org. 
As part of that, we are mass-closing older open tickets in bugzilla.gnome.org (resources are unfortunately quite limited so not every ticket can get handled).

If you can still reproduce the situation described in this ticket in a recent
and supported software version, then please follow

and create a new enhancement request ticket at
  https://gitlab.gnome.org/GNOME/evolution/-/issues/
