According to the HIG
http://developer.gnome.org/projects/gup/hig/2.0/menus-standard.html#menu-standard-view
the following shortcuts should be used

Zoom In  Ctrl++
Zoom Out Ctrl+-
Normal Size Ctrl+0
Full Screen  F11

BTW I don't know if its bad to keep the current shortcuts "+", "-", "1" and "F",
but I would display the HIG conform short cuts in the menus
