In the "Contact Editor", under "Telephone", is it possible to please add "VoIP" (or "Home VoIP" + "Business VoIP") as a selectable type? Also under "Instant Messaging", can "Skype" (and maybe "gmail chat") please be added as selectable types?

I also wonder about including Skype under "Telephone", and IRC nickname under "Instant Messaging", although I'm not certain about those (guess it depends how strict the definition of telephone and instant messaging is).

Skype type under Instant Messaging is in since bug #270376.

GNOME is going to shut down bugzilla.gnome.org in favor of gitlab.gnome.org. 
As part of that, we are mass-closing older open tickets in bugzilla.gnome.org
which have not seen updates for a longer time (resources are unfortunately
quite limited so not every ticket can get handled).

If you can still reproduce the situation described in this ticket in a recent
and supported software version, then please follow
  https://wiki.gnome.org/Community/GettingInTouch/BugReportingGuidelines
and create a new enhancement request ticket at
  https://gitlab.gnome.org/GNOME/evolution/-/issues/
