Default Applications use status icon "starred" for desktop icon. It's not freedesktop standart.

Please create symlink or new icon with new icon name and fix desktop file:
"preferences-desktop-default-applications" 
This icon already contained on mostly popular icon themes (Humanity, Breeze and etc...)

bugzilla.gnome.org is being replaced by gitlab.gnome.org. We are closing all older bug reports and feature requests in GNOME Bugzilla which have not seen updates for a while.
