documentation is a bit obsolete. There is no preferences in gedit main window
and should be opened from desktop top bar.

It's not possible to find this for a normal user.
Please, at least make better documentation on this page.
An screenshot would be very useful for every new GNOME user.

Thanks for reporting this. Fixed in commit 8dc13d8c62eca2977d96ed60836da5fa88dc5607 ; fix should be included in gedit 3.38.2 and later.
