if I want to edit this text layers again, I get their original size and not the matching, new size to the new canvas size

The problem is when you do a different transformation on the X and Y axes, GIMP can't just edit the font size. Yet we could detect when you keep proportionality and change font size in this specific case.

Also obviously even non proportional scaling quality could be improved (like changing the font size on one axe and scaling on the other), as well as other kind of transformations on text could be done with better quality.
