https://help.gnome.org/users/evolution/stable/mail-spam-settings.html does not link to https://help.gnome.org/users/evolution/stable/mail-default-folder-locations.html
It should because of "For remote account types (accounts such as IMAP) you can also use folders on the mail server for Junk and Trash by selecting the corresponding Use a Real Folder option".

2.
"Junk Mail Preferences" on https://help.gnome.org/users/evolution/stable/mail-spam-settings.html just copy/lists lots of options for POP/Local. 
But for IMAP, the last bullet point on https://help.gnome.org/users/evolution/stable/mail-receiving-options-imap-plus.html only says "if spam should be automatically filtered". Should be more consistent (probably the latter).

I'm absolutely puzzled about

I don't have the slightest clue where that string comes from. WTF. Server cache?
It is not displayed locally in Yelp here either... Anyway, I won't care.
