Scenario: I want to use a windows software I own (e.g. InDesign) to produce a confidential document. However I don't trust Windows securtiy. I'd thus want to install Windows in GNOME Boxes and have an air-gapped box in which I run my windows software. I'll transfer all my files through the host system. Not only I don't need network access in the guest, but I need to enforce no network access at all form the guest. GNOME Boxes is nearly perfect to cover this scenario. The only missing bit is a control, either at install time (preferred) or in the properties view to disable network access.

Would you consider merging patches implementing the attched mockups?
Can you elaborate on the use case? From the above it seems like you just want to remove/disable the network adapter in the guest?

If you consider this use case fits in Boxes goals, it's just a missing bit in the UI.
