In my workflow, I heavily rely on windowshading my windows (collapsing to just the title bar) when I'm not using the window.  Using gedit 3.18.3 in Ubuntu 16.04, the gedit main window does not respond to windowshade events.  It's specific to just the main gedit window, not the entire application -- the about window in gedit shades just fine.

IIRC applications which have widgets in their title bar cannot be shaded.
This might be a mutter issue instead?

I believe André is correct.  After reporting this bug, I found the same issue in other applications that have widgets in the title bar.  It's a general issue, not restricted to gedit.

Nope, client-side decorations mean window operations are implemented by the client/toolkit. So this would be implemented in gtk+, hadn't the developers rejected the feature ...
