We should probably use parsebin rather than decodebin3.

Not every format has a parser and sometimes we need to decode to know the full details.

A few years ago, when I did a parser-only version of GstDiscoverer (with decoders plugged in where we don't have a parser), it didn't seem like we lost much information vs. plugging in a decoder.
