Under X, dragging a terminal tab to outside the gnome-terminal window area detaches it to a new window. Under Wayland this doesn't work.

I think this was fixed by bug 763387.

(Note that DND tab detaching was disabled in gnome-terminal >= 3.20.3 due to it crashing the application.)

Is that crash intermittent (or a recent regression)? I don't think I've ever had a tear-off crash up to 3.20.2 at least.

If it was fixed, will tab detaching be reenabled at some point ?

Ok so this is fixed in gtk+, but disabled (for now) in g-t.
