Lets flip the switch. The feature missing before (capture and compositing of
multiple views) has been fixed.

Default to using stage views

Instead of hiding stage views enablement behind MUTTER_STAGE_VIEWS=1,
default to enable it, while making it possible to disable using
MUTTER_STAGE_VIEWS=0 instead.
