Currently existing symlinks cannot be edited using nautilus. This is a problem if the user has broken symlinks (happens) and needs to fix them.
I suggest to just add a file chooser dialog to let the user change symlinks.

Hello, thanks for reporting this.

As an alternative to editing a symlink, users can just delete the old symlink and make a new symlink. Explicit editing symbolic links is too abstract for most users, as explained in bug 46306, bug 785348, and other bugs.

With relation to broken links, nautilus already gracefully handles them, with a dialog explaining that the target cannot be found and offering to send the broken symlink to trash.
