After a change to bug #237917 uses can turn on View->From field override in a new message composer, which lets them change From Name and Email address on the fly, before sending the message.

@mcrha: I do not see any such option available in the mail composer in the "View" main menu item on Fedora 22 in 3.13.90. Is that disabled in that distro? Please elaborate.

No, the fix landed for 3.15.91 and later versions. By the way, I would use term "override", than "overwrite", but that's up to you.

I really wonder what's the behavior when the mail server has DKIM and SPF and I set my sender address to mcrha at rh com...

Trying with GMail, my original email address is used instead, and only a header is added to the message:
  X-Google-Original-From: Andre as Milan <mcrha@redhat.org>

It can be a feature of the Google SMTP server. Mine corporate for example refuses to use certain addresses, like other domains, while it lets me change the name part of the email address in certain way.
