Currently some gnome applications show "Quitar" as an Spanish translation for "Quit" when the actual meaning is closer to "Salir" or "Cerrar".

Completely agree. This might be and old (and wrong) translation that never was fixed...

I will review and fix it ASAP.

Just found two applications affected... california and regexxer, and both have been fixed in master branch in Git.

If there is another aplication affected by this bug, please tell me

I saw this error in Evolution (3.12.7). I thought I saw the same in other gnome or gtk based apps and began to suspect that it was some sort of common translation problem, but I can't seem to find those apps now :S If I come across any of them I'll keep a list and post it here.
