Look at sidebar close button

The sidebar does not have a regular close button. Why to use a different one?

It might be an issue with the theme.  It does not look weird with Adwaita theme in Evince 3.14.

Do you see the same issue with a newer Evince? and with Adwaita theme?

The reason for this is that 3.14.1 is still using the gtk-close stock icon. However, the master branch already contains a commit [0] changing the sidebar icons (including the close button) to the correct symbolic icons, which fixes this.

This particular bug has already been reported into our bug tracking system, but we are happy to tell you that the problem has already been fixed. It should be solved in the next software version. You may want to check for a software upgrade.
