The 'Default Dictionary Source' appears twice in the preferences and in the 'Dictionary source' tab. It seems that the way gnome-dictionary is programmed to include it regardless of what is inside the /usr/share/gdict-1.0/sources directory. So removing or making unreadable the default.desktop file there solves the problem, IE, the 'Default Dictionary Source' appears once and the software works properly.
