I was wondering if it's possible to download all my gmail mails locally in order to work offline?

This question conflates several issues, so I'm not quite sure what the problem is.  Have you noticed that your sent mail is not being saved, or is this just a question about the Accounts dialog?  I'll assume the latter for right now.

The "Save sent mail" option refers to saving on the mail server.  For GMail, it is both checked and greyed out, since GMail will do this automatically, without Geary having to do anything.

At the bottom of the Accounts dialog, the "Download mail" option specifies how much of your email Geary will save locally.  However, Geary does not have a true offline mode; see bug #714217.
