The shell recognizes that gnome-terminal uses GApplication but
does not include a app.new-window action (it uses win.new-terminal
with custom parameters), so it thinks it's single window,
but we can override that.

BTW. I don't see any documentation about either this desktop file key, nor the special 'new-window' action ? Shouldn't that be mentioned in GApplication docs?

Well, it's a gnome-shell feature, not a GApplication one, but yes, we ought to document it somewhere. I don't know where would be appropriate.
