It's possible to set an arbitrary e-mail address on an Gmail account and after verifying it's yours, you can also use it.

That's not possible in Geary, as the Username is also chosen as E-Mail adress,
it would be nice to be able to change that.

Ex. fredblatter@gmail.com has the domain blatter.ch, and one can use fred@blatter.ch as the primary mail that is redirected to gmail, and Gmail allows to send as fred@blatter.ch once verified it's your address.
