Go into the preferences, change the codec to FLAC instead of vorbis, and that will apply only to the current instance. When restarting gnome-sound-recorder, it will be reset to vorbis.

The values for volume and recording sliders are not saved either, but I'm not sure if those are meant to be saved.

Np, Jeff in Qc is shorthand for J-F which is shorthand for Jean-François.
Good to know the issue is fixed already!
