The custom title in the selection mode should have an arrow to hint it is clickable (at least that was the design when I did it in clocks, maybe things have changed?)

gnome-documents doesn't have an arrow in selection mode, neither does gnome-photos.

The example at:
https://developer.gnome.org/hig/stable/selection-mode.html.en
doesn't seem to have one either.

I'll reassign to clocks so you can ask the designers about it.

Selection mode is gone from Clocks.
