I could uninstall Evolution, but I can't uninstall Empathy (there's no remove button).

Why?
There doesn't seem to be any logic here... None of the apps should be obligatory to the use of the OS.

I'm running Fedora 20.

Empathy is defined as a core app that other applications rely on. See https://git.gnome.org/browse/gnome-software/tree/data/modulesets/gnome.xml#n27 for the full list. You might still be able to remove the app with your package manager, although be aware other applications might also have to be removed.
