GNOME Software currently requires users to Restart & Install updates.  I generally want to install updates after I finish using my computer, to avoid being interrupted by the update. Currently I'm waiting around for the system to finish installing updates, then holding down the power button when it's done. It'd be nice to be able to start the update and walk away, knowing my computer will shut off when the update is complete, like Windows does.
