Geary should allow this, since a user might not want any email and account details on the machine. I realized there's another situation this would be useful, if not vital. Since we don't allow editing IMAP or SMTP details (currently), if the user mis-entered something or needs to change it, their only recourse is to delete the account and start over. This is still valid in current geary: I cannot delete an account if it's the only one.
