Steps to reproduce:
1. Open preferences
2. Open tab "Themes" (don't change simple theme)
3. Open anyone tab
4. Close preferences
5. Quit empathy
6. Open empathy
7. Join to conference
Fix:
$ dconf reset /org/gnome/empathy/conversation/theme
Before:
$ dconf read /org/gnome/empathy/conversation/theme 
'Classic'
After:
$ dconf read /org/gnome/empathy/conversation/theme 
'Classic'
But in dconf-editor theme setting is *bold*
