When right-clicking a file -> "Open With", you can choose an application from a pre-generated list. However, you cannot modify this list. So a manually installed application (in "/usr/local" e.g.) never gets proposed. 

It would be nice to have an additional "Browse" button in the dialog, allowing to select an executable, and eventually adding it to the list.
