New topic: custom sessions

We should have a topic that explains how to set up a custom session that shows up in the session chooser on the login screen. Should mention 'classic mode' as an example of a custom session. Should also explain how to change the default session for new users.
Dear Matthias, I wrote a short text about custom sessions and Petr Kovář, a colleague of mine, was kind enough to commit the changes. Do you think you could be so kind as to review it or give me some guidelines how to make the text more accurate? Thank you very much. Hey Jana, the recipe for creating a custom session looks fine. The sections on classic mode and setting up a custom session look a bit incomplete. Setting the default session for new users is not currently possible with GDM. It always defaults to the session called 'gnome'.
