Turn on gnome-shell's onscreen keyboard from the accessibility menu.
Open Evolution, start composing a new message.

The onscreen keyboard appears, but only for the To:, C.c.: and B.c.c.: fields, it disappears when you click the area where you're supposed to type your message contents, which makes it impossible to send emails on a touch device such as a tablet.

Ended up being gtkhtml having a11y support broken due to some gtk+ changes.
