That's right. There is no "Create New Document" under the right click Desktop menu. Why? It was a useful feature and even if I use Gnome 3 I still use the Desktop and I needed that to create new Desktop files. You left only "New folder"...and as I see it maybe you plan to remove this one as well. I don't think that's a wise thing to do. By removing these features you limit the user and make a step back. There is no progress in removing useful features, you know. I don't want to draw any comparisons with Windows, but they certainly didn't remove features...they rather added new ones and kept the old fashion style alive. Please do not kill Gnome 3 by removing useful options.

Problem solved by following this guy's advice: http://www.webupd8.org/2012/11/add-new-empty-file-entry-to-nautilus-36.html Another way is to:
1) Create a new document with Gedit, leave it empty
2) Save the document on the ”Templates” folder in your home folder ( ~/Templates ) with the name “Empty file”.
3) Note the change in the desktop right-click context menu.
