If I don't configure a default gateway I can't save my config. What if I am connected to no internet gateway network? or if I have two networks, the wireless one with internet gateway and the wired wihtout that?

Could you describe your problem in more detail? (what do you try to set up, what GUI do you use, NM version, distro,...)

What GUI/program ?
nm-connection-editor will allow you to configure IP addresses without a special "gateway" (it sets the gateway to 0.0.0.0 then).

Default route is managed by NM automatically. You can force a connection to not ever get default route by ticking "Use this connection only for resources on its own network" in "Routes..." configuration on "IPv4 Settings" page in editor.
