It would be really cool if, after clicking "Activities" on the top right, the desktop list that appears on the right would be visible on all displays, showing the open windows in that display.

This extension https://extensions.gnome.org/extension/323/multiple-monitor-panels/ fixes this bug but also adds the top bar.

Yes, that is a known issue - last Guadec I talked a bit with the designers about this, unfortunately we didn't come up with a good solution:

 (1) Add one workspace switcher per monitor
     => implies that workspaces can be switched per monitor (think: 
        workspace 3 on monitor 1 and workspace 1 on monitor 2),
        which is not how workspaces work

 (2) Include non-primary monitors in workspace switcher
     => only really works for horizontal layouts, not
        vertical or L-layouts

So I'm afraid the issue requires more thought ...
