This would be useful for e.g. GNOME Documents, since you can now modify the title of a document from the UI. I could see this being used at least for Title and Author information.

I think it could be useful for Evince also. Right now it doesn't have the ability to change the metadata of a pdf.

Looking at the Poppler API which we use, there doesn't seem to be a way to update the data before writing a new file sadly. I guess we would have to use another library to do this.

There is some work on adding such functionality to poppler:

GNOME is going to shut down bugzilla.gnome.org in favor of gitlab.gnome.org.
As part of that, we are mass-closing older open tickets in bugzilla.gnome.org
which have not seen updates for a longer time (resources are unfortunately
quite limited so not every ticket can get handled).

If you can still reproduce the situation described in this ticket in a recent
and supported software version, then please follow
  https://wiki.gnome.org/GettingInTouch/BugReportingGuidelines
and create a new enhancement request ticket at
  https://gitlab.gnome.org/GNOME/tracker/-/issues/
