Lots of applications lack a High Contrast variant

For the short term, we should cover the essential set of application icons in high contrast. A few to start with: gnome-documents gnome-boxes devhelp evolution shotwell cheese file-roller gnome-disk-utility evince In the long term, it would be wise to mandate apps to ship a symbolic variant of the app icon to genrate/render the high/low contrast variants.
we should include the symbolic icon in our one-canvas-workflow template somehow and adapt the scripts to generate them as well. We're shipping the stencils in the scalable dir, so we may find conflicts in the systemwide hicolor theme (we could use the hc hierarchy, but having everything in hicolor would be better). I guess we should try to define some sort of fdo standard in the long run. P.S. for the scripting and template work I volunteer you to do it :-)
