In Edit/Personal Information, for AIM and Yahoo when I click on the avatar button and select a different image, the image shown does not change. For the other protocols I've tried the image does change.

Empathy 3.2.0.1, Ubuntu 11.10, Unity.

Could you please attach Empathy and telepathy-haze logs? You can get them from the help - debug menu.
