It would be nice to be able to create a new file by pressing a shortcut in Nautilus like it is already possible for folders (CTRL+SHIFT+N).

I suggest CTRL+SHIFT+F or M to creat a new blank file (M, because it is next to N and has no affinity with CTRL+F).

There is no such thing as a dedicated "blank new file" action nowadays, I think it's done using ~/Templates if you want such a thing, so a shortcut for this is not really possible.
