GNOME Documents forces itself to be maximized at startup, and everytime I unmaximize it I have to adjust its window size; it would be less frustrating if the window size and state was remembered.

The maximized state at startup is basically done by design, so I'm not sure about remembering that; but at the very least the window size should be remembered so if that the window is unmaximized, it will use the last user-specified size.
