gnome-control-center is missing look and feel settings (fonts, hinting, dpi)

Gnome3's 'Appearance' setting only allows you to change the wallpaper and UI theme. This is a significant regression from Gnome2 where it also allowed you to change the desktop fonts, rendering (hinting etc), dots per inch and other theme settings like the icon set to use. I'm using gnome-control-center v1:3.1.91-0ubuntu3 (Ubuntu 11.10).
The theme selection is just an Ubuntu patch, it's not upstream, just for the record

Not being able to change the fonts used or the font rendering tweaks or the desktop theme are part of the design.
Strange design. What's the thinking behind it?
I would argue it is a bug in the design, I have heard no praise for Gnome 3 dropping the options to choose the default icon set, in fact all I have heard is outrage and confusion.
