I've noticed that when rendering a video, pitivi only uses one core of my processor. It would speed things up if it could take advantage of multiple cores.

It already does, when you set it to use more than 1 thread in the advanced video codec settings in the rendering dialog, for codecs that support it.

Ideally it should figure this out automatically, that is bug 573395.
