x264enc got a profile property which lets you set the following four profiles:

1 baseline         - baseline
2 main             - main
3 high             - high
4 high10           - high10

These needs to be moved into the caps like we did for AAC.

I already wrote patches for that, also to set the level from the caps too. That said, we can't really proxy the level upstream in 0.10 (hopefully we will be able to in 0.11 in a meaningful way)
