In gnome shell there is really no way to open more than one application at once, you click the application and the activities overlay disappears so you have to go back and click it again, this severely slows down workflow.

One suggestion to fix this would be having a key that you could hold that would let you open applications without closing the activities overlay. For example, you could: hold shift and click 3 programs, they would all open without the activities view closing.

Note that you can drag launchers to the workspace to launch applications without leaving the overview. Anyway, a more obvious way to achieve this makes sense and has been suggested before.
