1. Input "abcd"
2. Input "一二 "  (one two in Chinese, There is a space after "二")
3. Press Ctrl-Z 
The "ab" disappeared :(
4. Press Ctrl+Shift-Z, only "一二" appeared again.

When Ctrl-Z works on a phrase with N Chinese characters, it will overlay 2*N English letters(or " ", "," "." etc)

I think this bug was fixed by this patch:

A version of Gnote with this patch was not yet released.

When I try this, it works fine (I use git master with few extra patches).
Are you able to grab Gnote source from git and compile it? It would great, if you could test it.
