In GNOME 2.x, you could set up multiple LAN connections and chose the correct one from the list. This is very helpful because you cannot rely on DHCP everywhere. In GNOME 3's shell there is no way to do this... not even using the network settings window.

You can, using nm-connection-editor. As soon as you add more than one connection, the shell will show a connection list.
Reassigning to gnome-control-center, as it's there that you should do such configurations.

Oh, wait... there *is* still nm-connection-editor? That surely solves the problem... but it is currently not discoverable at all...
