The included SVG is meant to remain as a source for future editing, it's not meant to be installed.

For GNOME 3 we are exposing app icon in the overview in the shell in higher
resolution than usual. While the app icon for evolution has been created as
vectors, the amount of details has targeted a 48x48px canvas. The icon is not
fuzzy, but its style deviates from the norm.

Attached is an updated evolution icon with the 256x256px high resolution
bitmap included.
